Tonight I decided to try and recreate one of my favorite dishes from Miami - which made for a great excuse to post about all of the awesome food we had down there! You have to treat yourself on vacation, right? Right?!
Fresh buffalo mozzarella pizza, chicken pad thai, fresh sushi, gilato snack in the afternoon and spinach empanadas for lunch. Basically a fabulous spread! You would think by looking at the photos that all we did was eat - but I promise we found time for the beach and a little shopping!

I was so obsessed with the spinach empanadas that I convinced Husband to recreate them with me tonight. Surprisingly easy! We sauteed spinach, boiled onion and garlic (Husbands favorite tv cook recommended this would make them easier to blend) - then threw it all in the blender. Husband chopped up cooked chicken and mixed it in with the spinach. We used ready-made croissant dough and baked them for about 15 minutes. Yum yum yum.
